Arroz a la Cubana (Cuban-style Rice)

I found this recipe from Periplus Mini Cookbooks “Filipino Favorites”. The recipe is interesting, Arroz a la Cubana combines the richness of meat with the sweet tastes of fried bananas and raisins, completed with eggs fried sunny side up. It looks quite easy, so I decided to try it on this weekend when we’re home. :)
Arroz a la Cubana

Serves : 4
Preparation time: 10 mins
Cooking time: 30 mins

Ingredients:

  • 1/4 cup oil
  • 1 medium potato, peeled and diced
  • 2 banana, peeled and halved lenghtwise
  • 4 whole eggs
  • 1/2 small onion, finely chopped
  • 200gr ground pork
  • 200gr ground beef
  • salt
  • Worchestershire sauce
  • 1 cup frozen mixed vegetables, thawed
  • 1/4 cup raisins

Directions:

  • In a work or skillet, heat 2 tablespoons of the oil and saute the potato until almost tender, remove from the wok and set aside in a bowl. In the same wok, add another 2 table spoons oil and reheat. Fry the bananas until light brown and tender. Remove and drain on paper towels and set aside.
  • In a separate pan, heat another tablespoon of oil and fry the egg sunny side up, remove egg as they cook and set aside
  • Heat the remaining oil in a large skillet an saute the onion and garlic. stir in ground pork and cook until brown. Seaason with a pinh of salt.
  • Stir in the ground beef and cook, stirring well with the other ingredients until beef browns. Season with a pinch of salt. Stir in a dash of Worchestershire sauce.
  • Mix in the mixed vegetables and stir well. Add the cooked potato and raisins, season with salt. Heat through for about 5 minutes.
  • To serve, spoon the ground meat mixture into a serving platter. Arrange cooked eggs and banana on top and served with plain rice.
