Bittergourd Omelette

This is one of the dishes I cook on a weekly basis. It’s fast and easy, plus I love bittergourd. Most people don’t like bittergourd because of its bitterness, but my mom told me that if I removed the seeds and rubbed the bittergourd with salt, it will be less bitter. Sometimes I managed to shaped it into an omelette, but sometimes I just scrambled it :)
Bittergourd Omelette

Serves : 4
Preparation time: 15 mins
Cooking time: 10 mins


  • 1 small bittergourd
  • 2 eggs, lightly beaten
  • 2 cloves garlic
  • Salt and pepper
  • 2 tablespoons oil


  • Cut the bittergourd into half. Remove the seeds and white inner flesh, then wash. Slice thinly and rub with salt. Leave aside for five to six minutes, then rinse.
  • Heat pan with oil, stir in the garlic, saute until fragrant then stir in the bittergourd, saute for 1 minutes. Add salt and pepper, then pour it into the egg mixture.
  • Mix bittergourd with the egg until it is evenly coated, then pour the mixture back to the pan. Cook for about 2 minutes until the egg is set, then flip the omelette and cook for another 2 minutes.
  • Serve immediately
