Crispy & Cheesy Pork

I read this recipe in last year’s Essential magazine and decided to try it today for lunch. The recipe is so easy, the whole preparation and cooking time took less than half an hour. The original recipe requires feta cheese, but since I can’t get that cheese, I replaced it with cheddar instead. :)
Crispy & Cheesy Pork

Serves : 2
Preparation time: 10 mins
Cooking time: 10 mins


  • 50gr cheddar cheese, crumbled
  • 1 tablespoon fresh mint chopped
  • 2 pork loin steaks
  • 50gr lettuce
  • 100gr cherry tomatoes, halved
  • 100gr breadcrumbs
  • 1 large egg, beaten
  • 5 tablespoon olive oil
  • 1 red onion, peeled and sliced
  • 1 tablespoon red wine vinegar
  • Mix the breadcrumbs with cheddar, mint, salt & black pepper. Put the pork onto a board, cover with cling film and beat with a rolling pin to flatten out. Dip the pork into the beaten egg, then in the breadcrumb mixture.
  • Heat 4 tablespoon of the oil in a large frying pan and fry the pork for 3-4 min each side or until cooked through completely.
  • Meanwhile, mix the lettuce, onion and tomatoes together with the remaining olive oil and vinegar. Season and serve with the pork.
