Stir-fried bitter gourd with minced chicken

I recently bought a new recipe book by Primarasa called Tumis Sayuran 15 Menit. The recipes in this book is quite easy and suitable for an amateur cook like me, plus it’s amazingly quick to cook. So, today I tried this bitter gourd recipe for lunch. I love bitter gourd and I usually made an omelette out of it. The result is delicious and SC loved it, so I think I’m going to try some other recipes & post the results here (when I’m not too lazy/sleepy to write after cooking & eating).

Stir-fried bitter gourd with minced chicken

Serves: 4
Preparation time: 15 mins
Cooking time: 10 mins

Ingredients:

  • 250gr green bitter gourd
  • 1-2 teaspoon salt
  • 2 cloves garlic, minced
  • 1cm ginger, minced
  • 2 tablespoon taoco (salted soybeans)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 tablespoon oil
  • 8 shallot, sliced thinly
  • 3 red chillies, sliced thinly
  • 100gr minced chicken meat
  • 50ml water
  • 1 tablespoon cornstarch, disolve in a little bit of water
  • 1 teaspoon sesame oil

Directions:

  • Cut the bitter gourd in half. Remove the seeds and white inner flesh, then wash. Slice thinly and rub with salt. Leave aside for five to six minutes, then rinse.
  • Heat pan with oil, stir in garlic and ginger, taoco, shallot and chillies. Saute until fragrant then stir in the minced chicken, stir vigorously until it changes color.
  • Add the bitter gourd, stir in water. Add soy sauce, salt and sugar to taste. Cook until the vegetable is almost done.
  • Add the cornstarch mixture to thicken the sauce, pour some sesame oil, remove from heat. Serve warm.
