Ginger rice with chicken and leek

I love savory rice, so when I saw V’s post on her blog: Pork and leek over ginger rice, I decided to make it for lunch. The instructions are quite easy. I ran to the supermarket to buy some ginger, leeks and chicken (couldn’t find pork, so I substitute it with chicken breast). The result was a very fragrant rice and the chicken works well with leeks. It was a delicious lunch. Thanks V. :)

Stewed Ginger Chicken

I found this recipe in Periplus’s Taiwanese Favorites Mini Cookbook. The recipe looks easy enough and it uses plenty of rice wine and sesame oil in the stewing sauce and lots of ginger as seasoning. I tried it and it resulted in a very delicious, fragrant chicken. The cookbook noted that a more traditional way to cook the dish is using 5 cups of wine and no water to produce a much stronger tasting broth.

Braised Chicken with Mushroom

I cooked braised chicken with mushroom for lunch this morning. I’ve made this a few times already, but I’ve never really measured the ingredients. This time, I browsed the internet and my cookbooks for the recipe, but I couldn’t find the recipe I wanted to show. So I kind of mixed the recipes I got from the internet & my cookbook. I made the preparation & marinade the night before to save some cooking time for the following morning.

Chicken Biryani Rice

I am an avid fan of Indian dishes, so I owned quite a lot of Indian cooking books. Recently I bought a pack of Basmati rice and are really looking forward to try it. One of my favorite Indian dishes is Biryani rice, the recipe is taken from Periplus mini cookbooks : “Asian Rice Dishes”.
